Beef Short Rib and Shrimp Tacos

Ingredient Description:
2 pounds beef short rib
1 pound shrimp – peeled and deveined
2 tablespoon all-purpose flour
1 tablespoon tomato paste
1 ½ cups red wine
4 tablespoons olive oil
2 cups low sodium beef stock
1 yellow onion – medium dice
1 carrot – medium dice
2 ribs celery – medium dice
3 cloves of garlic – crushed
1 bay leaf
1 sprig fresh sage
½ bunch fresh parsley
1 sprig fresh rosemary
4 sprigs fresh thyme
4 – 6 flour or corn tortillas
2 radishes – sliced into thin disks
½ bunch of cilantro- diced
1 lime – sliced
1 pinch of salt and pepper to taste

Short ribs

  1. Generously season the short ribs with salt and pepper.
  2. Heat 2-3 tablespoons of oil in the Calphalon Digital Sauté Slow Cooker pot on your stove top and ensure it gets hot. When the pot is hot, add the beef short ribs and sear on all sides.
  3. Once seared with a nice brown color, remove the beef short ribs from the pot and place them aside on a plate.
  4. Keep the pot on the stove and add remaining oil, yellow onion, carrot, celery and garlic. Sauté these vegetables for 8 – 10 minutes to draw out all the flavor from them.
  5. Once all vegetables are cooked, stir in tomato paste and all-purpose flower and cook for approx. 2-3 minutes, until the tomato paste is a burgundy color.
  6. Within the same pot, whisk in the red wine and cook until it is ½ reduced and then stir in the low sodium beef stock and all herbs.
  7. Place the beef short ribs into the pot and put the pot back into the Calphalon Digital Sauté Slow Cooker vessel.
  8. Cover the pot and cook on low for approx. 3-4 hours, once the beef short rib begins to fall off the bone.
  1. Once the beef short ribs are completed, begin cooking the shrimp.
  2. Cut the shrimp in half the long way and season them with salt.
  3. Put the Calphalon Premier Space Saving Cookware 3-qt. Sauté Pan on the stove and bring it to medium heat, then add olive oil to coat the bottom of the pan
  4. Add shrimp to the pan and cook on both sides until fully cooked and pink, approx. 1-2 minutes per side, and then put the shrimp aside.
  1. Pull the beef short ribs from Calphalon Digital Sauté Slow Cooker and pull meat off the bone using a fork and knife.
  2. Toast tortillas in a Calphalon Premier Space Saving Cookware 10” Fry Pan until the tortillas are lightly browned.
  3. Place a generous amount of beef short rib on the base of taco place a few pieces of shrimp on top.
  4. To garnish, add a few slices of radish and cilantro, and finish with a squeeze of lime.
